PROBLEM TO BE SOLVED: To provide a method for extracting a mushroom essence wherein impurities such as cadmium, arsenic and/or heavy metals are largely reduced while the extraction of active ingredients such as β-glucan and the like in similarly to the case of a hot-water extraction method. SOLUTION: This method for extracting mushroom essence comprises the following steps: soaking an Agaricus mushroom dried product in a mixture of water and alcohol; making water sufficiently contained in the Agaricus mushroom followed by repeating freezing and thawing the thus treated Agaricus mushroom to repeatedly conduct cytoclasis inside the tissue of the Agaricus mushroom; and thereafter soaking the thus treated Agaricus in cold water. |
