TEA CONCENTRATE STABLE IN SURROUNDING TEMPERATURE

PROBLEM TO BE SOLVED: To obtain a tea concentrate in which the amount of solid tea is about 20-70 wt.% and stable for a long time in a surrounding temperature and provide a method for producing the same. SOLUTION: This tea concentrate is obtained by allowing the concentrate to contain about 0.5-2.5 wt.% of xanthan gum based on the weight of tea solid and the amount of the xanthan gum to be inversely proportional to the amount of the tea solid when the tea solid is generated by extraction with enzyme and the amount of the tea solid is <approximately 45 wt.%.
