PROBLEM TO BE SOLVED: To provide a fermentation treating apparatus and fermentation treating method capable of easily performing the adjustment of water content of treated material obtained by fermentation treatment. SOLUTION: This fermentation treating apparatus 10 is provided with a fermentation vessel 14 which has a charging port 24 for charging organic waste and a discharging port 28 for discharging the treated material which is subjected to the fermentation treatment, at least one exhausting means 26 which is disposed on the charging port 24 side of the fermentation vessel 14 and at least one discharging means 30 which is disposed on the discharging port 28 side of the fermentation vessel 14.
