PURPOSE: A method for preparing a kind of taffy by using black pig with malt and glutinous rice as main ingredients is provided to serve taffy-formed black pork that can be taken easily without feeling of rejection on the meat. CONSTITUTION: The method includes the following steps of: (i) drying and pulverizing malt fermented at room temperature; (ii) decomposing sorted sticky rice in water and heating the sticky rice gradually before fermenting the rice; (iii) mixing 15-25% of the powdered malt, 25-35% of the fermented sticky rice and 40-60% of water at room temperature; (iv) filtrating the mixture through a fine sieve and adding 25-35% of carefully selected black pork to 65-75% of the filtrate; and then (v) heating the resulting mixture at 100deg.C for 8-10hr and gradually heating at a fixed low temperature to form taffy.
