PROBLEM TO BE SOLVED: To provide a processed product of Fagopyrum tataricum Gaertn. buckwheat flour which can efficiently make use of components to the maximum while supressing bitterness. SOLUTION: This processed product from Fagopyrum tataricum Gaertn. seeds is buckwheat flour produced by the following processes: a decortication process 1 by rolls in which separated buckwheat seeds prepared by removing foreign matter from harvested buckwheat seeds of Fagopyrum tataricum Gaertn. are passed between parallel rolls confronting each other while forming a small gap smaller than a buckwheat seed diameter and rotating at the same velocity in the same direction on the roll surfaces confronting each other in order to separate buckwheats from husks of Fagopyrum tataricum Gaertn. seeds by the compressive force of both of the above rolls; a separation process 2 for removing the husks and separating the buckwheats according to quality difference between buckwheats and husks separated by the decortication process 1; a puffing process 3; and a flour milling process 4.
