A method of emulsifying essential oils in water, particularly for the manufacture of refreshment drinks or concentrates, involves mixing the essential oil with one or more sugar esters of one or more lower (C1 to C6) fatty acids, exemplified by sucrose diacetate hexa-isobutyrate and sucrose octaacetate, and emulsifying the mixture in water. The sugar esters act as weighting agents and mention is made of brominated fatty oils, glycerin resin esters and chlorinated silicon oils previously employed for this purpose. According to an example, 54g citrus oil, 102g sucrose diacetate hexa-isobutyrate and 6g emulsifier are mixed to produce a solution having a specific gravity of 1.02. The solution is then emulsified with 162g of water. To produce a beverage, the emulsion is mixed with a solution of 0.4 Kg citric acid, 25.0 Kg sugar and 0.016 Kg permitted colouring matter in 33.5 Kg water, whereby 50 litres of juice concentrate are obtained, which concentrate is diluted with five times the quantity of water or carbonated water. Orange terpenes or vegetable mucilage of acacia are included in the concentrates produced according to the procedures of further examples. |
