PURPOSE: Provided is a method for manufacturing a jelly using barley as a main ingredient. This jelly is excellent in mouthfeel and nutrition. CONSTITUTION: Beans are roasted at 180deg.C and pulverized to make bean flour. Sugar syrup 72kg is heated up to 100deg.C in a double coated pot. Starch 28kg in a liquid state is added to the sugar syrup and continuously heated up to 105deg.C. Sugar syrup 72kg and sugar 49kg are added to the heated ingredients and heated up to 108deg.C. Margarine 9kg is put and melted in the ingredients. Roasted bean flour 39kg and bean flavor 0.03kg are added and cooled by rolling with a roller. The cooled ingredients are put in a mold. Each formed product is coated with sugar and packaged by an automatic packing machine in a different packaging unit. |
