PURPOSE: A method for treating rice to prevent rice cake or boiled rice from hardening is provided, thereby, they can preserve their original taste in a long time without any additives or cooking processes. CONSTITUTION: A method for treating rice to prevent rice cake or boiled rice from hardening comprises the steps of: (i) soaking washed rice in 30-60deg.C water for 1-2 hours; (ii) soaking in cool water for 10-20minutes and then soaking again in warm water of 30-60deg.C for 10-30minutes; and (iii) drawing off water and leaving for 10-30minutes for maturation. |
