PURPOSE: A method for preparing improved walnut oil is provided, which is reduced of its harmful ingredients and is not acidified easily by steaming in a water with addition of ginger and boiling with rice. CONSTITUTION: A method for preparing improved walnut oil composed of the steps of: (i) a first step to wrap walnuts with removal of rinds in a cloth, put in a container with cut ginger 1.5-2.5kg and water 8-12, install a rice steamer in the upper part of the container, place the wrapping cloth containing walnuts in the rice steamer, and heat for 4-6 hours with the lid; (ii) a second step to take out steamed walnuts, and dry; (iii) a third step to put rice 5-7kg and water 15-20L in the container, close its lid, and put the walnuts wrapped in the cloth when water starts to boil, and boil for 45-55 minutes; (iv) a fourth step to stop heating and steam for 1.5-2.5 hours; (v) a fifth step to take out steamed walnuts, and dry; (vi) a sixth step to pulverize dried walnuts 2-4mm or less; (vii) a seventh step to repeat the processes from the third step to the fifth step twice; and (viii) an eighth step to roast and extract oil by pressing with a compressor.
