PURPOSE: Provided is a method for manufacturing balloon flower kimchi to supplement people's diet with the nutrients which the balloon flower contains and to offer unique kimchi with different taste. CONSTITUTION: The method for manufacturing balloon flower kimchi is characterized by the following steps of: i) pickling balloon flower in salt water for 8-10 hours and washing and drying the pickled balloon flower; ii) finely cutting balloon flower; iii) mixing 60-70% of the balloon flower, 15-30% of shallots, and 4-5% of garlic and ginger; iv) mixing the ingredients with a variety of condiments; and v) fermenting the balloon flower kimchi until the balloon flower kimchi loses bitterness and its fiber becomes tender with unique and different taste. |
