PROBLEM TO BE SOLVED: To provide a new alcohol-containing seasoning and provide a cooked food prepared by using the seasoning, emitting little heat smell even after the heating over a long period, keeping the excellent property of the seasoning, giving well-balanced taste and keeping the desirable taste and flavor of the cooked food. SOLUTION: The objective new alcohol-containing seasoning is produced by adding a cyclodextrin to a liquor and/or an alcohol-containing seasoning containing at least one component selected from soy sauce, Miso (fermented bean paste), food vinegar, broth, sugar, table salt and spice. A Japanese hotchpotch is prepared by using the new alcohol-containing seasoning. The content of the cyclodextrin is preferably 0.1-85 wt.%. |
