PROBLEM TO BE SOLVED: To stably maintain a heat insulating temperature which is higher in temperature and at which there is no possibility of continuous boiling. SOLUTION: This electric hot water heater has a heating means 2 for heating the liquid in a vessel 1, a heat insulating means 4 for heating and heat insulating the liquid, a temperature detecting means 3 for detecting the liquid temperature in the vessel 1 and a control circuit for driving the heating means 2 and the heat insulating means 4 by the temperature detected by this temperature detecting means 3. When heat insulating operation is carried out in turning on a power source, the heat insulating temperature is set from the detected temperature after the heat insulating means 4 is driven to be turned on and off for the first prescribed time and this set temperature is maintained.
