PROBLEM TO BE SOLVED: To provide an efficient production process for uridine 5'-diphosphate galactose (UDP-Gal), a sugar nucleotide that is an important substrate for oligosaccharide synthesis. SOLUTION: This method of producing UDP-Gal is characterized by adding an enzyme preparation having the galacto-kinase activity and the hexose-1- phosphate uridyl transferase activity to the reaction system including yeast cell bodies, UMP, glucose and galactose. |
