METHOD FOR PRODUCING ERYTHRITOL USING MOTHER LIQUID PRODUCED FROM PURIFICATION OF PALATINOSE

PURPOSE: Provided is a method for producing erythritol massively and effectively by culturing Torula sp.variants in a medium that contains the carbon source of mother liquid generated from the purification of palatinose. CONSTITUTION: The erythritol is mass-produced by the steps of: (i) treating wild type of Torula sp. strains producing erythritol with N-methyl-N-nitro-nitroguanidine(NTG) as a mutagen and incubating them on an agar medium containing 38 to 42% of glucose and 1.8 to 2.2% of yeast extract to select mutant strains producing erythritol in high yields; (ii) repeating colony-separation method as above more than 3 times to finally obtain a Torula sp. variant (KCCM-10171) which is excellent in erythritol yield, volumetric productivity and sugar tolerance; and (iii) incubating Torula sp. (KCCM-10171) in a medium containing mother liquid that is produced from the purification of palatinose and consists of 30-60% of trehalose, 10-30% of palatinose, 5-15% of fructose, 5-25% of glucose and 0-10% of sugar.
