PROBLEM TO BE SOLVED: To minimize the remainder of water in a waterway, when an ice cream or sherbet maker is stopped for a prescribed period in a cold district. SOLUTION: In the maker in which syrup and water are introduced into relaying tanks 14A and 14B and the liquids in the relaying tanks are cooled and mixed by introducing into cooling cylinders 2A and 2B, a water tank 21 connected via a water pipe to an external water system, a water tap 25 between the external water system and the water tank 21, a draining water tap 26 branched from the water pipe and positioned between the water tap 25 and the water tank 21, and a water pump 23 for feeding the water stored in the water tank 21 into the relaying tanks 14A and 14B are provided. Under prescribed conditions, the feeding water tap 25 is closed and the draining tap 26 is opened, then the water pump 23 is driven.
