PURPOSE: Provided is an undiluted fermentation liquid made from three kinds of Lactobacillus sp. and Saccharomyces sp. with red rice yeast, shiitake mushroom, tangleweed, buckwheat, grape, onion and garlic, which has refreshing and sourish tastes and can be used for functional foods preventing synthesis and absorption of cholesterol. CONSTITUTION: The undiluted fermentation liquid is produced by the steps of: (i) adding 0.1-10% of red rice yeast, shiitake mushroom, tangleweed, buckwheat and garlic to a mixed solution of 40-70% of onion and 30-50% of grape; (ii) sterilizing the mixture and inoculating 0.1-5% of three kinds of Lactobacillus sp. and one kind of Saccharomyces sp. to the disinfected mixture; (iii) first fermenting the inoculated mixture at 10-30deg.C for 18-72hr; (iv) adding 0.1-1% of citric acid and 1-20% of fructose to the mixture and secondary fermenting at 0-15deg.C for 24-72hr. The composition of the fermentation liquid also includes 1-10% of dietary cellulose and the resulting composition can be used for producing processed fermented meat, kinds of sauce, compositions of lactic acid beverages or desserts or kinds of noodles. |
