The invention concerns a hand-held mixing beater comprising a drive motor (6), two rotary coupling elements (38, 16) associated with the motor (6) and designed to receive a beater (10) and a mixing arm (25) respectively, and an electric switch (52) actuated by a knob (48) mounted rotating on a rotation shaft (50) and occupying a neutral position and several switching positions for the motor to operate without interruption. The invention is characterised in that a coil spring (66) is mounted concentric to the rotation shaft (50) of the knob (48) and has a free end (68) and a fixed end (67) linked to the knob (48), and a safety part (70) is mounted mobile between a neutral position in the presence of the mixing arm (25) and wherein the free end (68) of the spring (66) is pressed (72) on the safety part (70) so as to permanently tension the spring (66), and a retracted position in the presence of the beater (10) and wherein the pressure (72) of the safety part (70) is cleared so as to permanently release the spring (66).
