PROBLEM TO BE SOLVED: To provide a dryer which can highly efficiently dry an object to be dried by causing heat exchange between the object and a heating medium while the dryer highly efficiently agitating the object put in a tank provided with a jacket for the heating medium on its outer periphery and can accurately adjust the moisture content of the dried object. SOLUTION: A dryer is provided with an inverted truncated conical tank, a jacket provided around the tank, a rotating shaft erected in the tank, a plurality of arm sections protruded from the rotating shaft, and blades changeably attached to the arm sections. The intervals between the external side faces of the blades and the internal surface of the tank are made narrower and, at the same time, the intervals between the internal side faces of the blades and the center of rotation of the rotating shaft are made uniform or shorter as going upward. In addition, a torque monitor is installed to the driving system of the dryer and a temperature monitor is provided at the portion where an object to be dried comes into contact with the tank. The dryer adjusts the introducing amount of a heating medium to the jacket and the rotating speed of the rotating shaft by using a function containing the signals from the torque monitor and temperature monitors as variables.
