Process for determining the quality of fats and oils comprises determining the concentration of heavy volatile hydrocarbons using a first gas sensor from which the criterion for the quality of the fat or oil is derived. An Independent claim is also included for a measuring device for carrying out the process comprising a first gas sensor (G1) for determining the concentration of heavy volatile hydrocarbons and a second gas sensor (G2) for determining the concentration of light volatile hydrocarbons.
