PROBLEM TO BE SOLVED: To obtain a new α-formed starch with an oil and fat, solving defects such as stickiness, property of dispersing to water, etc., while maintaining and improving an eat feeling-improving property and water-absorbing property which are advantageous points of the α-formed starch. SOLUTION: This α-formed starch with the oil and fat having characteristics of exhibiting <=50% degree of the oil and fat separation and <=5% degree of adhesion to a vessel is obtained by heating a starch slurry in the presence of the oil and fat so as not to collapse the starch particles completely. |
