PURPOSE: A method of preserving persimmons for a long time removing the skin and drying the persimmons is provided to maintain the unique taste and the high sugar content of the persimmons in all seasons. CONSTITUTION: The storage method includes the following steps: (i) collecting persimmons had the first frost in October and paring the persimmons; (ii) hanging the peeled persimmons not to be hit each other; (iii) aging the hung persimmons by repeating a process of natural drying with ventilating the persimmons at -5-10deg.C for 5-15days; (iv) quick freezing the aged persimmons at about -50deg.C and storing in a freezer; and then (v) conveying the persimmons to consumers with maintaining the temperature at less than -20deg.C. The resulting persimmons are then defrosted at 0deg.C to be taken.
