摘要 PURPOSE: To fractionate frozen boiled rice by grinding and to loosen it without breaking. CONSTITUTION: Boiled rice (a) is cooled into a normal temperature. The boiled rice (a) is rapidly frozen and water on the surface of the rice grains is frozen. The boiled rice is blocked by the ice crystal on the surface of the rice grains and the blocked boiled rice is fractionated by grinding and loosened. The cooling and freezing are carried out by providing the top and the bottom surface of net conveyors 12 and 22 with jet nozzles 15 and 27 along their fixed length and spraying cold air from the nozzles 15 and 27. The spray flow smoothly penetrates into gaps among the rice grains (a) and shows its cooling action. Water on the surface is frozen before the grains of the boiled rice are frozen to the core and the boiled rice is blocked by the ice crystal on the surface as mentioned above. The ice crystal is broken by shear action caused by meshing of rotary combs 32, vibration of a conveyor 33 and a spray flow 34 and the blocked boiled rice is fractionated by grinding and made into a loosened state in each grain. In the operation, since the rice grains are not frozen to the core, they are hardly broken by shear action.
