PROBLEM TO BE SOLVED: To produce a wheat-gluten bread confectionery having a rice confectionery flavor and texture by including gluten, wheat flour and rice flour therein. SOLUTION: This wheat-gluten bread confectionery is produced by including gluten, wheat flour and rice flour therein. The gluten is preferably kneaded with the wheat flour and rice flour and the resultant kneaded material is then preferably baked and subsequently seasoned. The baking of the kneaded material is preferably carried out in two stages to improve the adhesion of a seasoning liquid when seasoning the baked material. Furthermore, the kneaded material is preferably baked in a mold, which is then preferably opened to bake the molded material in a hot-air oven. |
