The invention relates to methods of making foodstuffs from fish, namely to methods of making paste-like foodstuffs using fish, shrimps, crabs and other sea-products as basic initial product. The method is characterised by putting of vegetable oil and water into preliminary crumbled mixture of ingredients milled to a consistence of a forcemeat. A volume of added oil and water is dependent of the specific type of basic initial product. Homogenisation of mixture of ingredients followed by its emulsification is carried out on the next stage of the procedure according to the method. Conserving agent, such as sodium benzoate, may be added into the mixture of ingredients before its emulsification according to the method. For basic initial products, such as fish sorts with small content of albumen, real soy beans, for instance in a form of powder, may be added into the mixture of ingredients according to the method. The method guarantees long terms of conservation of final products before its use - up to 180 days without sterilisation. |
