PURPOSE: A method for drying and polishing rice is provided to enhance nutritional value and taste of cooked rice by drying rice to an optimum state and polishing. CONSTITUTION: The method is characterized by drying harvested rice to have a water content of less than 14% in natural drying environment; and polishing the dried rice using a conventional dry-type rice-polishing machine. This polished rice has a weight of 80kg per a straw bag.
