PURPOSE: A method for preparing concentrated solution of beef soup by using all the bones of Korean cow that is packed in pouch is provided to serve the wholesome and nutritive beef soup product with improved flavor and storage life. CONSTITUTION: The method comprises the following steps: (i) removing flesh parts form the whole bones of 2-3 year old Korean cow and soaking the bones in water for 24hrs to remove the blood; (ii) boiling the cleared bones in 1.5-5times of clean water, based on the weight of the bones, for more than 24hrs and separating bones from the water to get a first undiluted solution of the bones; (iii) heating the separated bones in another clean water for more than 24hrs and getting a secondary undiluted solution from the soup; (iv) boiling the bones in clear water for more than 24hrs and taking out the bones from a third undiluted solution; and then (v) boiling down the first, the second and the third soups for more than 24hrs to get a concentrated solution of the bone soup before sterilizing packing in pouch, a bottle or a can.
