摘要 <p>PROBLEM TO BE SOLVED: To enhance the evaluation accuracy of the eating quality of rice in consideration with immature rice. SOLUTION: In a rice eating quality evaluating apparatus, a spectroscopic device for analyzing the component and quality of a rice sample is constituted so as to be capable of irradiating the rice sample with the wavelength of light ranging from a visible region to a near infrared region. The absorbancy of the light of the absorbing band characteristic to chlorophil of the visible region or the immature rice mixing degree due to this absorbancy is calculated, the absorbancy of the wavelength becoming the evaluation index of the eating quality of rice of the near infrared region or the component becoming the index of the eating quality value of rice due to this absorbancy is calculated, and the absorbancy of the light of the absorbing band characteristic to chlorophyl or the tendency of eating quality deterioration due to the immature rice mixing degree is reflected to the evaluation of the eating quality.</p>
