PURPOSE: A sliced and processed radish product that is taken with meat or raw fish food is provided to promote taste and flavor of the food and digestion and to prevent geriatric diseases by lowering cholesterol level. CONSTITUTION: The radish product(10) is produced by the steps of: (i) salting cleared radish, redbeet or turnip to toughen the texture and desalting before slicing the prepared radish to a thickness of 1-3mm; (ii) soaking the sliced materials in a mixed solution of 0.1-2wt% of acidulant, 0.1-0.2wt% of sweetener, 0.01-0.005wt% of seasoning, 0-50wt% of coloring and flavoring agent and 99.79-47.74wt% of water for 30min-1hr; (iii) paring the skin of the soaked radish and cutting the resulting radish into a designated shape of disc, oval, square, polygon or roll; and then (iv) vacuum packing the shaped radish. The coloring and flavoring agent includes kinds of fruit, seasoning, herbal materials, powdered tea products and herbs. |
