摘要 FIELD: food industry. ^ SUBSTANCE: according to the proposed method the paprikas are pre-processed and packed in jars; the jars are filled with hot water for 2-3 minutes of minimal temperature 90C. After that the water is substituted with solution warmed up minimum to 95C. Then the jars are seamed and sterilised in autoclave. ^ EFFECT: autoclavation acceleration combined with enhanced thermal treatment uniformity.
