Lipid particles having a mixed matrix of solid and liquid particles are new. Independent claims are also included for: (A) lipid particle dispersions with a 30-95 wt.% content of lipid particles or solids (lipid and stabilizer); and (B) the preparation of the lipid particles and dispersions.
