PROBLEM TO BE SOLVED: To develop a colored pattern on the surface of bread. SOLUTION: This process for the preparation of patterned bread comprises a mixing step to non-uniformly mix kneaded white bread dough with a pie pastry sheet added with a colorant and colored to a color different from that of the bread dough, a dividing step to divide the mixed bread dough obtained by the former step, a preliminary fermentation step to preliminarily ferment the mixed and divided bread dough, a rolling step to degas the preliminarily fermented bread dough by rolling, a forming step to form the rolled bread dough, a final fermentation step to perform the final fermentation of the formed bread dough and a baking step to bake the finally fermented bread dough. The patterned bread 1 prepared by the above process has a surface 2 originated from the white bread dough and a surface 3 originated from the pie pastry sheet mixed with each other on the surface of the bread, in other word, it has a pattern originated from the color of the pie pastry sheet exposed on the surface.
