PROBLEM TO BE SOLVED: To obtain a composition for promoting the proliferation of Bifidobacterium, capable of promoting the proliferation of the bacteria belonging to the genus Bifidobacterium, and capable of producing a cultured material excellent in flavor, from a cultured product of Geotrichum candidum. SOLUTION: This composition for promoting the proliferation of bacteria belonging to the genus Bifidobacterium is obtained, for example, by dividedly injecting raw milk to a Sakaguchi flask, sterilizing the injected raw milk at 95 deg.C for 5 min, inoculating one platinum loop of Geotrichum candidum SBT7053 (FERM P-10054) separated from acid milk, culturing the inoculated microorganisms at 30 deg.C for 4 days under an aerobic condition while shaking the flask at 60 rpm, removing the biomass of the Geotrichum candidum by a centrifugal separation from the cultured product, regulating the pH of culture supernatant so as to be 4. 6 by hydrochloric acid, removing the formed precipitate, regulating the pH of the resultant liquid so as to be 6. 8 by sodium hydroxide, removing the formed precipitate, and degerming the resultant liquid with 0. 45μm membrane filter.
