摘要 High-quality soybean processed food from which a raw smell specific to soybean is effectively removed. A production method for the soybean processed food, comprising a mashing step (A) for mashing raw soybean to obtain mashed soybean soup, and a heating step (B) for heating the obtained soup for heat-denaturation, wherein, in the course of the heating step (B), a deaeration step (C) is taken for removing bubbles mixed in the soup. The heating step (B) and the deaeration step (C) are preferably performed in succession. These steps can be performed efficiently by using a heating/deaerating device (1) including a first heating device (10) for heating the soup to a preset intermediate temperature, a deaerating device (20) for deaerating the soup heated to the intermediate temperature in the first heating device (10), and a second heating device (30) for further heating the soup deaerated in the deaerating device (20) to complete heat-denaturation.
