<p>PROBLEM TO BE SOLVED: To provide a method for treating a fruit or vegetable after harvesting so as to prolong the preserving time thereof, while preventing them from accelerated maturation. SOLUTION: This method for treating a fruit or a vegetable comprises successively carrying out a step of cooling the fruit or the vegetable to the center by showering with an aqueous cooling liquid composition at 0-15 deg.C, or immersing in the aqueous cooling liquid composition, and a step of subjecting the cooled fruit or vegetable to a treatment by showering with an aqueous liquid treatment composition previously heated to 40-60 deg.C for <=10 min, or immersing in the aqueous liquid treatment composition for <=10 min, in order.</p> |
