ALBUMEN COMPLEX, ITS PRODUCTION AND USE THEREOF

PROBLEM TO BE SOLVED: To obtain an albumen complex having excellent emulsifiability and heat resistance and useful e.g. for an emulsifier by combining albumen with a fatty acid and then by treating the complex with an alkali. SOLUTION: This albumen complex not causing gelation of its aqueous solution having solid albumen concentration of 10 wt.% even under heating at 80 deg.C for 10 min is obtained by combining 10 pts.wt. solid albumen such as raw albumen with preferably 5-30 pts.wt. fatty acid such as capric acid to form an albumen complex and then by heat-treating an aqueous solution having the solid albumen concentration of 7 wt.% at a pH value of >=9 (preferably >=9.5) and e.g. 85-100 deg.C. An emulsifier is prepared preferably from the albumen complex and an emulsion composition is preferably prepared by including the albumen complex. The emulsion composition is preferably heat-treated at 70-130 deg.C for at least one min when or after emulsification.
