PROBLEM TO BE SOLVED: To provide a pizza crust having a rice cake-like texture while keeping a shortened crispy feeling at the outside, and a bread-like texture in the inside caused by the formed grains. SOLUTION: This pizza crust having a rice cake-like texture with 3,000-8,000 mm.g value corresponding to the energy for breakage in a tensile test by using a texture analyzer is obtained by including a modified starch and gluten. The raw material powder of the pizza crust preferably comprises 30-67 wt.% modified starch and 3-20 wt.% gluten. A pizza is obtained by baking the pizza crust. |
