PROBLEM TO BE SOLVED: To provide a method for producing flour for sour material, capable of simply producing a sour material having high activity and excellent shelf stability in comparison with a conventional production method. SOLUTION: A material dough obtained by adding water to rye flour and fermenting the mixture is mixed with one or more of flour, rye flour and starch and water and fermented. The addition of one or more of flour, rye and starch and water and fermentation are repeated at least twice. The fermented material is mixed with one or more of dried grain flour and dried starch and ground to give flour for sour material for a raw material.
