The invention concerns the use of a powder mixture comprising: sugar selected from the group consisting of saccharose, fructose or mixtures thereof, a gelling agent selected from the group consisting of carrageenans, xanthans, guar gum or mixtures thereof, and optionally a thickening agent such as carob seed flour, for preparing a gel-forming sugar.
