PROBLEM TO BE SOLVED: To obtain a fading preventing agent effective for significantly suppressing the fading phenomenon of safflower yellow pigment, gardenia yellow pigment or gardenia blue pigment and obtain a pigment-containing food having significantly suppressed fading tendency. SOLUTION: This agent for preventing the fading of safflower yellow pigment, gardenia yellow pigment or gardenia blue pigment contains isochlorogenic acid, especially at least one kind of substance selected from 3,5-dicaffeoylquinic acid, 3,4-dicaffeoylquinic acid, 4,5-dicaffeoylquinoic acid, 3,4,5-tricaffeoylquinic acid and their salts. |
