PROBLEM TO BE SOLVED: To obtain the subject food treated to have a reduced content of allergen, which is improved in processability, such a food being known to be difficult to process by the ordinary method. SOLUTION: This processed food of flour treated to have a reduced content of allergen is obtained from the grit-shaped pieces of a mixture containing flour treated to have a reduced content of allergen as the stock material, which is preferably extruded, more concretely extruded into noodle-like shapes, and coarsely crushed before or after being dried. The mixture containing flour treated to have a reduced content of allergen contains pregelatinized flour treated to have a reduced content of allergen and/or pregelatinized starch, preferably pregelatinized starch and/or starch mixed with batter of flour treated to have a reduced content of allergen to adjust contents of the pregelatinized material and water, more concretely at 10 wt.% or more, based on the dried food, for the pregelatinized material and 10 to 50 wt.% for water. The grit- shaped pieces are heated under pressure, and then treated under a vacuum to puff, to obtain the processed food of flour treated to have a reduced content of allergen. |
