A method for determining at least part of the anatomy of an animal carcass in order to control the processing of the carcass, comprises positioning the carcass, determining the position of a chosen area of carcass, which forms part of the rump, and deriving at least one carcass dimension required for controlling carcass processing. Independent claims are also included for (a) the apparatus for carrying out this method, comprising a carcass positioning device, at least one sensor for the chosen carcass area, and a processor device (8) coupled to the sensor and including a means for controlling the processing station or tool, and (b) a combination of this apparatus and a meat processing station.
