PROBLEM TO BE SOLVED: To obtain a modified protein excellent in stability and effectiveness by bonding a glucan composed of a mainβ-1,3-glucan sugar chain andβ-1,6- glucan residues regularly introduced thereinto to a protein. SOLUTION: The modified protein is formed by reacting a glucan composed of mainβ-1,3-glucan sugar chain andβ-1,6-glucan residues regularly introduced thereinto with 0.1-50 mol equivalent of a periodate such as sodium periodate to oxidize theβ-1,6-glucan residues into aldehyde groups, removing unreacted periodate from the obtained reaction solution by e.g. dialysis, adding 0.00001-10.0 wt.% protein to the solution to bring the protein into contact with an oxidized glucan enzyme, and adding 0.0001-1.0 wt.% reducing agent such as sodium borohydride. The glucan used is exemplified by schizophyllan, scleroglucan, or lentinan. The protein used is exemplified by papain, bromelain, trypsin, collagenase,α-amylase, or glucoamylase.
