Process for preparing stanol/sterol fatty acid esters such as beta sitosterol fatty acid esters, useful in reducing cholesterol levels

The method for producing stanol/sterol esters of formula 1 comprises reacting a stanol/sterol of formula 2 and a fatty acid in the presence of a mild catalyst. In the above formulae: R1 is a C6-23 carbon chain and R2 is a C3-15 carbon chain. Specific examples of R1 are -(CH2)7-HC=CH-CH=CH-(CH2)5CH3, -CH2CH2-(CH2-CH=CH)6CH3, -(CH2)7-HC=CH-CH=CH-(CH2)2CH=CH-C2H5 and -(CH2)3-(CH2-CH=CH)6CH3. R2 can be -CH[(CH2)3-C(CH3)2(CH2-CH3)][ CH3]. The mild acid catalyst can be NaHSO4. The stanol/sterol esters are used to reduce serum cholesterol.
