PROBLEM TO BE SOLVED: To provide a method for obtaining a sucrose fatty acid monoester from a sucrose fatty acid ester mixture simply in a high yield. SOLUTION: An aqueous solution of an acid is added to a solution of a mixture of sucrose fatty acid mono-, di- and triesters. The mixed solution is adjusted to pH 4-6, cooled, a formed precipitate is removed and a sucrose fatty acid monoester is collected from the solution to give a sucrose fatty acid monoester having >=99.9% purity.
