PRODUCTION OF RESORCINOL POLYAMINE DERIVATIVE

PROBLEM TO BE SOLVED: To produce a resorcinol polyamine derivative by reacting 7- hydroxycoumarin with hydrogen under a specific condition and reacting the produced 7-hydroxydihydrocournarin with diaminobutane under a specific condition. SOLUTION: The objective compound of formula I can be produced by reacting 7-hydroxycoumarin with hydrogen under a condition sufficient for proceeding hydrogenation and reacting the produced 7-hydroxydihydrocoumarin with diaminobutane under a condition sufficient for producing the objective compound of formula I. The resorcinol polyamine derivative may include the compounds of formula II and formula III as preferable examples. These compounds are effective for inhibiting the oxidation browning of foods and drinks, especially the enzymatic oxidation browning caused by polyphenol oxidase(PPO) activity.
