A distillation process for removing sulfur compounds from alcoholic drinks without the use of chemical additives, loss of alcohol or detriment to flavor, is new. A distillation process and assembly removes unwanted components especially sulfurous compounds from alcoholic beverages. The distillation assembly has a separation column. The liquid containing sulfur compounds is introduced directly into the distillation zone within the separation column above the base which represents between 0.5 to 0.8 (preferably 0.7) of the distillation zone. The column is preferably a valve plate column. The column has approximately 19 plates, and the alcoholic fluid is introduced to plates between 12 to 14 (preferably 13 (counted from the bottom upwards)). The temperature of the incoming alcoholic beverage is preferably 65 to 75 degrees Centigrade. The temperature at the base of the column is maintained at approximately 80 to 90 degrees Centigrade.
