PURPOSE: An incineration method for waste produced from kitchen and an incineration apparatus for such waste are provided to reduce cost for waste disposal without generating noxious dioxin. CONSTITUTION: A method comprises the step of allowing the water produced from the kitchen to be saturated with aqueous emulsion of silicon oil, lighting the silicon oil, and extinguishing the burning silicon after a complete incineration of the waste. An incineration apparatus comprises an upper conveyor(5) arranged in a dry room(2) having a heating member(6), a waste(18) transported by the upper conveyor(5) and dried, a spray nozzle(15) for spraying aqueous emulsion(13) of silicon oil to the waste so that the waste can be saturated with the emulsion, an ignition member(9) for lighting the emulsion, a lower conveyor(7) installed within a combustion chamber(3) so as to burn the emulsion while transporting the waste, and a shower(11) for extinguishing the burning emulsion.
