PROBLEM TO BE SOLVED: To obtain dried bean-curd refuse, light in color, little contaminated with bacteria, little producing smell of oxidized lipid, preservable for extended periods and useful as, e.g. food additive, by the method comprising dissolving/ suspending bean-curd refuse, sterilizing the suspension under heating, separating the solids from the liquid, and drying the solids. SOLUTION: This method for producing dried bean-curd refuse comprises (A) dissolving/suspending 1 pt.wt. of bean-curd refuse in 1 to 10 pts.wt. of water containing, e.g. 5 to 20% of ethanol and adjusting the suspension at pH 4 to 7, (B) heating the suspension at 110 to 160 deg.C, preferably 125 to 150 deg.C, for 0.1 to 10 min to annihilate heat-resistant spores in the bean-curd refuse, and (C) separating the solids from the sterilized suspension by a solid-liquid separation method, and drying the solids by, e.g. rotary kiln or drum drier, to moisture content of 15% or less, preferably 5 to 10%. It is preferable to recover, e.g. soybean isoflavone, protein and oligosaccharides from the aqueous solution separated from the bean-curd refuse suspension. |
