PROBLEM TO BE SOLVED: To provide an emulsifying coagulant for tofu (bean curd) having a wide range of stable functions for obtaining the tofu having excellent hardness and elasticity. SOLUTION: In this emulsifying coagulant for tofu, the concentration of magnesium chloride in an emulsion is 25-50 wt.%, the average emulsified particle size (based on the volume) of the emulsion is in the range of 0.5-4 μm and the kurtosis of distribution of emulsified particles is 0.2-0.6. |
