PURPOSE: A preserving method of persimmon with decreasing and increasing temperature by stages to recover the original state of persimmon, is provided, which can stabilize the price. CONSTITUTION: A preserving method of persimmon comprises gathering persimmon exposed to the first frost of the year in the after mid-October, maturing for 15-30 days in the box divided into partition, freezing at -50°C quickly and storing in cold storage warehouse, then transporting with keeping less then -20°C to final consumer and thawing at 0°C to -1°C for 24 hours. The method can obtain the original state of ripe and soft persimmon.
